The grapes are normally harvested during October.
The slopes are too steep to use machinery so all the grapes must be picked by hand.

The grapes are then pressed.
We use the smooth press and natural sedimentation method
to extract the juice.
Allowing the sediment to settle naturally this way retains the quality of the juice.
The alternative would be to force the sediment out using centrifugal force.
This speeds up the process but damages the juice and therefore the future taste of the wine.
We bottle most of our white wines the following June but allow the red to age for a further year.
